Appearance
- The shape is twisted and needlelike
- Each leaf is of an equal and uniform size
- Few stems or old leave (There are no stems or old leave in Gyokuro and high quality tea )
- Little powder
Quality
- Aroma is fresh and sweet
- Taste is “umami” (deep flavour, less bitter, more sweet). The higher the quality, the less
bitter the taste
- Colour of infused tea is transparent, clear.
Tea is graded lower when the end result is dark and cloudy, and when the tea contains more stems and old leaves, and more powder.
