This tea was also carefully selected by Ms. R. Uchiyama as one with a high concentration of polyphenols. There are many different types of second harvest tea but our Uchiyama standard tea is one of the teas analyzed by a well-known research specialist. This tea has the highest concentration of polyphenols of those in our collection. Polyphenols (a substance in green tea well-known to protect the health) make the taste of tea bitter. This is why this tea is much less costly; the less bitter the tea, the costlier it is.

However, this second harvest tea is of a very high quality, and of a very mild taste. In general, tea from this region is known for its mild and delicate flavour.

Even after an infusion time of 10 minutes (5g in a 250ml hot water, recommended by doctors for cancer patients) it does not become too bitter. It is an ideal medicinal tea that can be enjoyed on a daily basis.

I call this LADY TEA, gentle and elegant.

Interesting statistics: People who live in these tea-producing regions suffer from fewer health problems than the national average. There are lower rates of cancer, diabetes, cardiac problems, high blood pressure, etc., and the life expectancy of men living in Tenryu was the highest in Japan in 2005. In both Tenryu and Kawane regions, the incidence of stomach cancer was 1/3 the national average.

This tea meets all necessary requirements to be labeled a high-quality tea (KOOKYUU-CHA): shape of the leaves, colour, lovely shiny texture, flavour, colour of the liquid and the aroma (both before and after infusion).

If I must name it, I will call it TONO-SAMA TEA, a seigneur (possessor of a castle) from its traditional tea.
