
TRADITIONAL WAY OF SERVING SENCHA AND GYOKURO
- Bring the water to the boiling point.
- Cool the water to 70C-75C for Sencha, or 50C for Gyokuro (transfer the hot water to another container to speed the cooling process)
- Use 6g-10g or a little more leaves for 3-5 people (1 teaspoon=5g.)
- Pour the cooled water into the teapot and infuse 1-2 minutes for Sencha, or 2-3 minutes for Gyokuro. Quantity of water is same as how much you need at
each time. Empty tea pot each time.
- (Standard tea cup sizes are 100ml for Sencha, 50ml for Gyoku).
- Slowly pour an equal amount of tea into each tea cup, until all
the tea has been poured. Empty the teapot completely.
- You can use the same tea leaves to make a second pot; the second pot should be infused for approximately 30 seconds; the third infusion can be served immediately. This way, five people can be served, even with a small teapot.
- If there are more than two people being served, pour a little tea into each cup, making one round, then make another round in the opposite direction. This way, each cup of tea tastes the same.
- A word of advice: for best results, fill 60% of the teapot with hot water (of the correct temperature); if more tea is needed, pour more hot water into the same teapot for the second infusion.
- Change tea leaves as often as possible. It is not recommendable to re-infuse tea after more than two hours from the last infusion
There are four principles to a good pot of tea:
- Buy a good quality green tea
- Use good water
- The tea and water should be in the proper proportion; the water should be the proper temperature, and the infusion time should be of the proper length.
- When you make a large quantity of tea, infuse a couple of times, instead of
infuse teas at once in a large tea pot.
SPECIAL WAY OF SERVING SENCHA UCHIYAMA
Sencha Uchiyama To gain health benefits from this tea, drink ten cups daily, using 100ml. of water per cup. It is easy to drink ten cups per day: in the morning, following meals, when feeling tired during a long day at the office, after work, in the evenings—it is tasty, and refreshing.
Alternately, you can prepare a 10-minute infusion with 250ml of hot water, two to three times daily. There may be a bitter taste to this longer infusion.
(You should not infuse the same tea again once you infuse 10 min.)
